What is specialty Coffee?
Specialty Coffee is held to a much higher standard than commodity coffee. Coffee is marked down if there are defects and marked up for positive attributes such as acidity, body, flavour, aroma and aftertaste. Strict quality standards control and minimize the number of allowable defects in Specialty Coffee ensure better quality and tasting end product.
Indicative of it’s higher value, Specialty Coffee is processed, transported and stored separately, in better conditions than commodity coffee. These stringent measures protect the bean quality and flavors that are unique to the micro climate where those beans are grown.
The 100 Point Coffee Review Scale sets out criteria for the final product. Coffees are cupped or tasted by qualified Graders who can objectively evaluate coffee against a globally recognized set of criteria. Specialty coffee must score 80 or higher. All Bolt Action Coffee roasts score 85.5 or higher on the Coffee Review Scale, designating them as ‘Excellent’. Coffee scoring 90+ is extremely rare.
